How can I request availability for a specific U.S. telephone number (i.e. spells a name/word)?

Zoom does support vanity toll-free numbers.

Requesting a vanity toll-free number – Zoom Support

Zoom does not support Vanity (Specific combination of numbers) for Local DID numbers and will only provide available numbers in the desired country and city.  you may be lucky if one of the available numbers that zoom displays fits your need.  If you want a specific local number,  try to google vanity telephone numbers.
