Every time that I join one of our team meetings and attempt to use Chat for the first time, I get a message indicating that I'm chatting as a guest. This is odd because my Zoom account is part of the organization. Are there any other settings/config I should check and/or ways to resolve this?

Can you 100% confirm that you are logged into your Zoom Desktop Client when these issues appear? It is very possible to join meetings on your account while not actually logged into client, which will result in Guest status.

I've checked the account in Zoom Desktop and confirmed I am logged in and in the correct account.

I have the same issue, and am also logged in to my organisation's business account
