Using an ATA with an Analog Phone

Why is it that we can't connect an analog phone to an ATA and use it with Zoom Phone but we can use an ATA for fax? That's what I was told by the sales rep.

That's incorrect. Zoom is not monitoring each ATA device to verify if it's generating a fax tone vs plain jane audio for a voice call. I've used Cisco ATA's for POTS on desk phones no issue.

What's POTS?

And why would Zoom say that ATA support is only for fax?
