The local numbers have changed and I don't see San Jose as an option anymore. Will the number still work on meetings previously scheduled?

I understand your question as 'How can we have meeting dial-in numbers based out of San Jose'

 

If my understanding is correct, the account owner/admin should be able to control dial-in countries and regions here: https://support.zoom.us/hc/en-us/articles/115004454886-Specifying-Global-Dial-in-Countries-Regions
