I'm in the UK but really keen to see the Customers website experience for  Contact Center . What options are there to customise the chat / Video widget and how does a Customer choose to start a Video call?

This is so new (just announced yesterday), but here are a few public resources you might not have seen to learn more.  Besides that I would probably reach out to your account manager and ask for a demo.  I am pretty excited about it too (as a reseller).
