Our company utilizes a dual-screen setup during meetings, with one monitor dedicated to screen sharing and the other for viewing participant webcams. I would recommend viewing the following support article to verify that your Application settings allow Dual Screen. https://support.zoom.com/hc/en/article?id=zm_kb&sysparm_article=KB0064500
Sometimes an update can revert some settings, which appears to be the case here. You can also find out about sharing multiple screen simultaneously here: https://support.zoom.com/hc/en/article?id=zm_kb&sysparm_article=KB0064237
