The company I am working with uses Slack for all of their chats, they do not want Zoom chat being used at all, and want it disabled at a enterprise level, that way all collaboration is within Slack and not Zoom.

I understand your concern and I'll be happy to help you disable the chat in the Zoom Desktop Client.
You can disable the option by going to your account management page and selecting IM settings, https://zoom.us/account/setting. You should have an option there that will allow you to disable chat for all users. See the image below:

Question: Will this setting also disable In-meeting chat? I would like to keep In-meeting chat enabled.

No, In-meeting chat is controlled separately in the Meetings tab of the Settings page.

@Cumpian, if the above link doesn’t work for you, try this one: https://zoom.us/account/setting
It’s under ADMIN -> Account Settings, scroll over to Zoom Chat, scroll down to the Security section, then locate the Allow users to chat with others. Turn off the switch, as @Happytohelp123 shows in his attached image.
