I have to schedule some webinars for an organization but they don't want me to be the host.
Once all the webinars have created, I will copy the link to the webinars in an automatic confirmation e-mail the participants receive after they subscribed to the webinars via the website.
When my job is done, if I change the owner to another person with an e-mail address with the same domain name as mine, is that person gonna be able to host the webinars?

Or maybe I should change the owner before starting schedulling and schedule the webinars with her address (new owner)?

If you create the Webinar, you will always been the originating Host.
You can specify an Alternative Host who could start the Webinar and gain Host privileges instead of you, but they would need to be a licensed user on your account. If you joined the Webinar while in progress, Host would be passed bac to you.
