In the admin account you can turn off all AI.

I see that others have answered, but if your question is more about blocking third party Ai like Otter or Fathom I will add some thoughts.
If you have an account that allows support tickets I have heard that you can request Zoom support to block certain domains.
if your account supports it, go here to open a ticket. https://support.zoom.us/hc/en-us/requests/new
Another approach is to require registration and turn on the Captcha.
Go to zoom.us/profile/setting.
Enable the Show a "Join from your browser" link option.
Check the Require solving a CAPTCHA for guest users (users who are not signed in) option.
This should prevent meeting bots like Otter.ai from joining your meetings.
