I just purchased an extra license so my coworker could schedule zoom meetings also. These would be separate meetings and simultaneously from mine. Will that work or should I just have gotten a separate account for her?

A primary account owner, like your first license can certainly have multiple sub-accounts, which can be free or paid accounts. Assuming that you added this additional license to your existing account, this should be fine.
You then need to associate an email address to the new license.
