Window size when screen sharing setting is disabled

After a recent update (currently 6.2.0 on MacOS), I am no longer able to change my "Window size when screen sharing" to "Maximize window".  I have worked with our IT team to enable in their admin dashboard but there does not seem to be an option for them to control this.

 

Defaulting to and forcing "Fullscreen mode" is very disruptive as I need to scramble to un-fullscreen so I can CMD-Tab between Zoom and other windows.
