I will be hosting a meeting where attendees can join at anytime. We will, at times, be using breakout rooms. What I want to know is what will display in the main room if someone joins after all attendees have moved to a breakout room. Will they get something visual that tells them breakout rooms are in use and that they can join one?

No- All they will see is an empty room with no directions unless they know beforehand so...
I recommend that as host You remain in the main room to direct late arrivals ( or lock the door and make sure everyone knows ahead of time to arrive on time because late arrivals will NOT be admitted.
You could also get an image and use it as your picture- use text to give directions, or make sure everyone invited knows all about breakrooms before they attend.
Zoom is very flexible and there are multiple ways to handle ay given situation.

In larger Meetings, we have sometimes nominated a person as a Moderator or Greeter to welcome and direct Participants as they join the main room, when everyone else is in Breakouts.
