I'm a graphic designer who shares work via screenshare. The image sharpness and color saturation are degraded on Zoom. Is there a way to fix this?

Calibrated color displays are always an issue in the graphics world. I do video editing and I have calibrated Viewsonic screens on a Windows 11 OS using an Nvidia graphics card. IF your client has a calibrated screen you trust to reproduce a graphic file correctly you could send an appropriate file format via chat that they could open. This could bypass the streaming compression and video rendering method. For the sharing time you could also go to settings > video > advanced > and try different settings for rendering and capturing. You could also try looking at using RealVNC remote desktop in conjunction with Zoom, where the color level, and color space can be adjusted using expert settings and all screens can be visible to the viewer.
