Lately I notice that as I'm talking to one other person in a meeting, it keeps cutting back and forth between me and him, even if one of us is talking for a long time. I want the camera to stay on the speaker.

If you are the host, you can Spotlight the person you want to stay focused for everyone.
Whether or not you are the host, you can Pin a person to stay focused just for you. Note that pinning doesn't always work, such as when the host has Spotlighted someone.
Spotlight and Pin are menu items in the Participant window and on the ... menu of individual video/cameras.
