without using any screen share feature, do you know if there is a shortcut in Zoom for Mac (to be then used in the Elgato Stream Deck) to jump to a specific Camera in the list, beyond the Zoom hotkey Command + Shift + N (which forces you to switch to every single camera till you get to the right one) or how can I achieve this?

You can use OBS (free software) to achieve this. Set up two scenes in OBS using each camera, and then you can set buttons for each in streamdeck. In zoom set your camera to OBS.
