Last week I scheduled a meeting for tomorrow requiring breakout rooms. I didn't realize I had to activate them in my account beforehand. Will the breakout rooms work in my scheduled meeting tomorrow even though I scheduled it last week?

As long as you have Breakout Rooms enabled in your settings before you start the meeting, it will work fine. This applies to instant meetings and already scheduled ones.

Bort, I launched a previously scheduled meeting today. Breakout Rooms did not appear even though it was and is enabled (not sure it was enabled when I scheduled the meeting). I had to launch new meeting and then breakout rooms appeared.

Hi all. The same thing happened to me. I had Breakout Rooms turned on through my account settings on the Zoom website. I likewise had a checkmark on allowing breakout rooms on Scheduled Meetings. Still, the breakout rooms option/button did not appear as the meeting was ongoing.
THE SOLUTION I found was to CHOOSE ENHANCED ENCRYPTION for meetings instead of END-TO-END ENCRYPTION. These settings can be arranged on the website and via the Zoom client/app on your PC.
I hope this helps the others.
There is--after all--a note whenever choosing END-TO-END ENCRYPTION for meetings. This note states that some functionalities or features will be disabled for this encryption option. Included in these disabled functions are the polls and the breakout rooms.
