Only 3 will be displayed at upcoming meetings. What should I do if I want to see beyond that which is already scheduled.

All upcoming meetings will show in the Zoom application if you are scheduled from the Zoom app or outlook Zoom Add-ins. If someone else scheduled and send an invite to you, it shows only the same day's (Today) meeting in the Zoom application.
If it is a syncing issue, Remove the calendar from your account and reconfigure it again.

Sign in to the Zoom web portal.
Click Profile.
In the Calendar and Contact Integration section, click Delete Calendar and reconfigure again.
