Since the introduction of Linux client 5.11 zoom does not allow sharing a portion of the screen but either your full monitor or certain app windows. Sharing part of the screen was very useful to me as I have an ultrawide monitor and sharing the entire monitor or just an app is not good enough.
Why was this removed? Will it be introduced again?

I've faced the same issue. Looks like this functionality is not available for Wayland, but is available for Xorg sessions. For example GNOME Desktop Environment works on Wayland by default (so by default you can't use this feature), but can also work on Xorg: see this link. Once you log in using X11 windowing system, launch Zoom and share a Portion of Screen.
