Is it possible for the host to record the Zoom session to the cloud while a co-host records to his local computer? Is it possible for a co-host to accidentally stop the cloud recording of the host?

Hi Vtom,
If a host has local recording enabled in their user settings and has the box checked to give permission for others to record in the meeting, it appears you can give permission during the meeting for the co-host to record locally.
Note however there are some differences in recording layouts in recording to the cloud vs recording to a local computer - https://support.zoom.us/hc/en-us/articles/360025561091-Recording-layouts#h_01EJEZRCE139C2SRK3PTFBA0Z...
As for your second question, that I'm not sure the answer to. You'd probably have to test that out ahead of time.

Open the Zoom client and click Settings.
Click the Recording tab.
Enable Record a separate audio file for each participant.
Record and save the meeting to your computer.
Once the meeting is over and the recording has processed, open the recording folder.
Within the folder, open Audio Record.
