Local recording NOT high res all the time

I host Zoom meetings between 10-20 hours per week (without screen sharing). I record all calls locally on my machine. Most of the time, it records high res, but occasionally it does not. Can anyone tell me why? It's kinda frustrating.

I have gesture recognition turned off in my settings, but within the last week or so, Zoom is always putting a thumbs up or fireworks on my screen when I am talking. Not only is it super distraction, but then my video freezes. During a call yesterday...
