I teach a class every week and I would like to add a polling. The meeting ID is already provided, and one cannot schedule a meeting with an external ID (is that true?). Since the only way, it seems, to create a polling is by selecting a scheduled meeting, I don't know how to proceed in my case.

You can easily add a Poll to an already scheduled meeting. This article has more info about how to create a poll: https://support.zoom.us/hc/en-us/articles/213756303-Polling-for-meetings

If you are a host/cohost of the meeting you should be able to create a poll once in the meeting.
