Can someone you don't personally know and has never had access to my computer somehow know when you are attending a specific zoom meeting?  And if so, please tell me how this is possible?

Based on the above paradigm... A total stranger with no access to your computer or calendar WOULD NOT be able to track your attendance to meetings.
