When sending panelist invitations for a Zoom webinar, how can you tell if a panelist accepts the invitation? I don't see a tracking feature.

Are you refering to the "Yes/No/Maybe" attendance confirmation to a meeting that is common for Webex or MS Teams?
I donot believe that Zoom has this option.
The panelist can add the invitation to his/her calendar, but cannot confirm his attendance from the calendar directly.
I usually add a message to the invitation to panelists to reply back to the email as a confirmation that they have received their link / login credentials and to confirm attendance.

Thank you for the quick and helpful response. Yes, I was referring to the Yes/Maybe/No response that are often options when sending invitations. Since it's not a feature in Zoom, I'll take your advice as ask the panelists to respond to the email invitation. Thanks again!

There is a more complicated way to do this i.e. by using the zoom plugin for your calendar and generating the meeting from your calendar......you will however need to play with this option to get all the settings you require.
