On April 16, between 2:25 P.M. ET and 4:12 P.M. ET, the domain zoom.us was not available due to a server block by GoDaddy Registry. This block was the result of a communication error between Zoom’s domain registrar, Markmonitor, and GoDaddy Registry, which resulted in GoDaddy Registry mistakenly shutting down zoom.us domain. Zoom, Markmonitor, and GoDaddy worked quickly to identify and remove the block, which restored service to the domain zoom.us. There was no product, security or network failure at Zoom during the outage. GoDaddy and Markmonitor are working together to prevent this from happening again.

What's the best/easiest way to keep current with new Zoom features? How do we come to know what we don't know it (or third parties) can do?

I would recommend 'Following' the Zoom Releases By Date support article at https://support.zoom.us/hc/en-us/sections/360008531132-Zoom-Releases-By-Date. Every time there are new release notes posted, I get an email with a copy of the release notes that often help to give a summary of new features added to the platform.

Keeping up with Zoom's new features is already a burden, but some sort of industry watch on all the add-ons and how useful they are? That's a full-time job.
