500 Internal Error

I am also a zoom developer.
So, the reponse back from zoom is not being processed. These is a new security feature form zoom which asks for an “ok” message from apps.
My guess is that this is not being seen, although Pardot is in use by some many, I would have expected many more complaints if it was a general failure.
 

The other possiblity is that the option to send out the confirmation emails is disabled by pardot and so Zoom does not send out the confirmations.

This again is a programming issue.
Pardot need to set this too.

To enable automatic confirmation emails for Zoom API-created meetings, include "send_notification": true within the {Link: registration_settings https://community.zoom.com/events-18/zoom-events-api-is-there-a-way-to-send-confirmation-emails-when-creating-tickets-via-api-61984?ampDeviceId=cf61fcc4-9472-4c8b-821b-d8c633b8c3a8&ampSessionId=1769457600479} object in your API request. This ensures registrants receive join links automatically, avoiding the need for a separate manual system. 

I regret that you need to go back to Pardot and Zapier for their support in fixing this.
