We have a huge team using zoom using varous meeting links, how can we track how the organization is using Zoom  and analyze the dataset.

Really depends on what data you want to analyze. Can you provide a bit more insight into what you want to analyze about their Zoom usage? Number of participants per meeting? Number of meetings per user?
