Curious if it's possible to send the Interpretation window to its own display or a multiview in a Zoom Room.

You could pin or spotlight an interpreter to a display or perhaps doing something more advance with NDI. Check these options below:

FYI, pin is only for local view. If you want all participants to see the same, then you need to use spotlight.
