Recurring meetings

Sounds like you've created a No-fixed time meeting, which means it will say Meet anytime, since it is available anytime. You would need to manually edit the invite template directly to say that, but editing the template will affect all meeting invitations.
I'd suggest just editing that line after you've copied the invite, or paste the details in a Google or Outlook calendar event scheduled for Mondays at noon.
