Recording a 1-1 interview on Zoom to post on Substack and YouTube

If I want to use Zoom to record 1-1 video interviews for my Substack and YouTube channels, what plan and settings do I need? Any advice from content creators who have used Zoom for this purpose is hugely appreciated!
