If I'm assigned "schedule privilege", can I edit a meeting arranged by the meeting creator?

Yes, you should be able to view all their meetings and edit any of them as needed. It is usually easier to edit them through the Zoom web portal, rather than on a calendar service directly, as working on the calendar-side of things involves the added permissions needed within the calendar system you're using.
