Is there a way to convert a zoom video to a pdf file? I did not have closed caption on when recording so cannot use that option.

It sounds like you are asking for an improper solution to an unspecified problem. If you are looking to add closed captions to the file you could simply play the file back using Zoom with closed captions on then record it again. You could also obtain a complete transcript using a similar process.
