Hey @reverett, try using a VLC player instead of Quicktime because that video player will pick up the vtt file that is contained in the recording folder and hopefully display it while playing the video.
- Start your instant or scheduled meeting.
- Click Closed Caption
.
- In the Closed Caption window, after closed caption is entered by yourself or another party, click Save closed caption history.
- Click Show in Folder or Finder to access your saved captions and play the video file with VLC.
Here is the download link for your MacOS https://www.videolan.org/vlc/download-macosx.html or https://www.videolan.org/vlc/download-windows.html for Windows
Once installed right-click on the video file (mp4), choose "Open with" and select "VLC".

As of now, I don't believe you can download a recording with Audio transcripts embedded, however, they're saved in VTT format. If you download the VTT file, you can open it with a text editor or word processing application as suggested above. You can also view or edit transcripts in the web portal.
Hope this workaround helps you out!
