We're holding an online event and are not sure yet whether we will get more than 100 people. Will it be possible to send the Zoom link round. Then, if lots of people sign up, buy a one month add-on for meetings with up to 500 people - and still use the original meeting link?

Yes, that is definitely possible. When/if you purchase the Large Meeting Add-on and assign it to your profile, all your meetings, including already scheduled meetings, will be upgraded to the new maximum participants count. The link for that meeting and other details will not change, just how many are allowed to join.
