Zoom identifys everyone by the email address, so if you change that it will confuse zoom.

To change email is reay hard, but you can do it if you have a paid account.

In admin you would setup a new account with the new email, and then transfer the licence to the new user,
Laslty you would delete the old user and then ask zoom to transfer to the new account.
