Where are my phone call transcripts kept after call completed

I enabled the Zoom call transcript and today I used it on two calls, but I cannot locate the transcript.  Where do I find them to copy and paste them into a system?

Transcripts are available only when call was recorded (but I'm pretty sure that you are aware of this).

When logged to your account, in Personal section go to Phone > Recording.
After pressing play button, it will also show transcription.

However, you may see "Admin has disabled this transcription" info.
In that case go to Admin section, Account Management > Account settings > Zoom Phone > Ad Hoc Call Recording
and enable Allow call recording transcription option.

I need to find out where to get a copy of that transcript after the call ends as I use it for note taking.

That seems to be only so called "live transcript". So you can play the recording and view transcribed text. I haven't found any option to actually download it or copy the text easily...

From what I've also found - to be able to download the transcription of phone calls, you will need "Revenue accelerator" license:
