I am in Australia and have just joined Zoom. When creating an overseas contact contacts do I have to include the full international phone prefix, eg. 001144 for the UK.

Hello @Artpayne , 👉 always use +E.164 format 👈
Prefix codes like "0", "00", "011" to do Long-Distance dialing only have "localized" significance within the country.
To dial UK, always use +44.xxxxxxxxxx (i.e. London +44.20.XXXX.XXXX)
To dial US always use +1.xxx.xxxxxx (i.e. New Year +1.212.xxxxxxx)
Store all your contacts in the same fashion.
