Does anyone know if you can save the chat in the cell phone Zoom app, in this case an iPhone?

No, you can't save it on an Android or an iOS - iPhone or iPad.  I have asked the meeting host to please send me the text file.  When there have been links provided in the chat, you can copy them and paste them into your Notepad.  Or click on the link and have it open in a new window.  I hope they will upgrade the apps to allow us to save the chats.
