Hi there. I know that by default, an assigned co-host does not have access to Cloud recordings, and are not sent the email notifications that the recording is ready. I have read that you can adjust the cloud recording emails to also be sent to the co-host, but despite searching I can't see where this is in Settings. Thanks for your help.

You're close, but its the alternative host, not necessarily a co-host, that can also receive the cloud recording emails.
To set this up, go to your Settings page and find the email notifications section. There you will look for the setting for sending an email When a cloud recording is available. Under that setting, there is an option to also send the email to the alternative host:
