Zoom no longer has any virtual backgrounds other than Blur or None

If your account is part of an organization then it is highly likely that an admin has managed them the way that they wish. They can delete, set the default, and now or soon be able to require and push the same virtual background to each participant.

If it is just your account you could disable the feature on the Zoom backend, start a meeting to confirm that it is not accessible, then end the meeting, then re-enable the feature, and start a new meeting. I'm pretty sure this will let you add them back like the first time.

Plod- YES! There was a super cute cottage one with a bright window and a daffodil art piece. It was one of the pre-loaded in zoom. Now it's gone! I'm looking EVERYWHERE on the web for something similar. I LOVED it!
