I'm sending this more of as a bug report. At this time we've rolled our Remote Desktop session hosts running Zoom back to 5.16.2.22807.
Unfortunately I don't have much more to add than my post but I'll give whatever detail I can as to what we were seeing.
When launching Zoom, the zoom.exe process in Task Manager would show, and then disappear after a few seconds.
No logs found in the log location.
No Windows Event viewer events found.
Turned off our A/V (Sophos) to verify that was not interfering.
