I had this issue with Mint Linux and now Ubuntu Linux with running zoom-client. Always using the newest versions.
The hosts window cannot be 'pinned' when others join causing the hosts window to be minimized and moved to the top of the screen as if a client and not the host. Also, no other window can be pinned either. The video source sometimes gets scrambled or freezes up when others join the meeting.
I am not sure what information is needed. Ubuntu v24.04 LTS and Zoom's newest version. Surprisingly, the audio does work.

Later in the evening there was a software update. What was updated is unknown.
I can now access the participants tab and pin the host from that window.
