One of our users has scheduling privilege over several other staff members. Recently, the option for that has disappeared from her Outlook Zoom plug-in, but it still shows up in the Zoom desktop app. Any ideas why this happened?

I am often inquired about this by internal users.
It is an issue on the part of Outlook that sometimes disables some Plugins after an update that takes place in the background. This is not specific to the Zoom Plugin and seems to be a kind of bug.
You can re-enable the Zoom Plugin in the settings menu of the Outlook plugin.

The plug-in is still enabled, so that won't work. I've tried disabling and re-enabling it too.

Aha, if you haven't figured it out yet, here's what the problem was for me --
You were likely signed out, even though you're still able to create a zoom meeting. If you look at the very bottom of the plugin, it should say Signed In as ... then be blank, indicating you're not actually signed in. Sign out, then sign in once more, and it should be fixed.
