I assume you’re talking about the associated domain verification process described here:

I’m not exactly sure regarding Zoom, but I know other apps and well known processes like email (SMTP) seem to rely on a consistent presence of the TXT records. I’d advise leaving them in unless you hear something definitive from Zoom to the contrary. 

The TXT records don’t hurt anything if left in your DNS.
