Is there a way to run a poll that allows the attendees to provide a short (1-2 word) answer?

Yes, if you turn on advanced polling and quizzing for meetings you'll be able to see additional poll options like short answer, long answer, matching, and fill in the blank. Advanced Polling and Quizzing in Zoom
