If I mirror my camera video, I noticed on my recordings the video is not mirrored. Is that how it's supposed to work, is mirror my video more of just a confidence monitor feature?

Think of Zoom Video Mirroring as a "For You" thing. It doesn't affect those in the meeting or recordings. It simply helps you see you the way you see yourself in the mirror in the morning.
If you desired to record the image mirrored then a solution like vMix, Ecamm, OBS would do the trick. There are many choices.

that's a bad idea, at least you should let user can choose mirror or not mirror option

This makes zoom clips pointless, trying to demonstrate a dashboard to someone you need your head to point in the right direction. I understand why mirroring works the way it does for live meetings ... but for clips? Surely you want the video to show exactly what you see on the screen.
