I purchased a Pro plan this week and am hosting my Father in Law zoom funeral service. I scheduled the meeting and sent out the codes. I just realized I needed to add the 500 attendees, which I purchased. Will the code I created earlier this week still work, or do I need to create a new one?

Welcome to the Zoom Community, @Mllusch. My condolences to your family.
Your existing meeting/code is fine.
Zoom checks the capacity of your account at the point the meeting is started. It’s not tied to your capacity at the point the Meeting is scheduled.
I’m pleased to see you are using the broad reach of Zoom to share the service with those that might be unable to attend in person – I’ve seen several of these discussed here in the Zoom Community recently. If you have the opportunity, come back here and post any helpful tips for others that might be considering doing the same.
