Yes, Even if someone joins a meeting without logging in, Zoom still tracks basic data, including:
Zoom captures whatever name the guest enters when joining.
You can view:
Join time
Leave time
Duration
You may view this in your Webportal account as a host and admin under reports> meetings and webinars.

I appreciate your promptly answer.
When I mentioned "non logged users" I was trying to specify an scenario where a company employee connects to an external Zoom call. That employee has no Zoom account (so, no Webportal account). In this scenario the only solution are network logs right?
If an user has Zoom.exe application (Zoom Client), I understand the solution you give me will work.
But can these logs be extracted via API or some log forwarder like LogBeat?
