If I'm assigned "schedule privilege", can I edit an existing meeting already arranged by the the person who assigned me schedule privileges? Or am I only able to create a new meeting on their behalf?

Yes, you should be able to view all their meetings and edit any of them as needed. It is usually easier to edit them through the Zoom web portal, rather than on a calendar service directly, as working on the calendar-side of things involves the added permissions needed within the calendar system you're using.
