This started about 2 weeks ago. I have to run through speaker and microphone settings every meeting. I end up back where it was set after testing. It doesn't matter if I don't change machines or have been on another video conference program before joining Zoom. Same machine, last meeting is Zoom and I still have to test. Does anyone have a fix for this?

It is not clear what dialog you are referencing. Just as a guess try going to settings > meetings & webinars then turn off "show video preview first". If this not it then provide a screenshot to help explain.
If this works please click accept as a solution.
