How can I delete my email address across the screen during calls

This is controlled by the meeting host, and is referred to as a watermark.  See this Zoom Support article for details:

If the host suspects that someone is inappropriately copying the information on the screen, they can enable the watermark, so that if any images or video are seen where not authorized, the source of the information is known.
